Which is the best/preferred platform to use?

I'm using the Standard platform at the moment, If I want to try the SP11, do I just install it then use the VoxCommandoSP.exe file or do I need to uninstall VC, then reinstall VC?

No need to uninstall your current configuration.

You can install VC again in a separate folder, and then run the VoxCommandoSP.exe in that new folder.
TIPS: POST VC VERSION #. Explain what you want VC to do. Say what you've tried & what happened, or post a video demo. Attach VC log. Link to instructions followed.  Post your command (xml)

You can also just make a copy of your existing folder if you have made changes to it.  Just remember that it's a good idea to purge your cache and restart if you are going to switch between the regular and SP versions.

And of course remember that any commands that use dictation won't work with SP and you should probably delete them to be safe.

I'm going to give the SP11 a try but want to confirm what I need to Download.
Do I need to install this •Microsoft Speech Platform SDK v11.0 or •Microsoft Speech Platform Runtime v11.0 or both.
I'm running a 64bit version of windows 7.  Do I download the 64bit version of the above or does VC require the 32bit version.

Then I need the language pack http://www.microsoft.com/en-us/download/details.aspx?id=27224 ?
